A gluten-free diet may benefit those with autism, M.S., seizures, Down Syndrome, diabetes, ataxia (loss of balance), arthritis, osteoporosis, immune disorders, Parkinson’s disease, some neurologic disorders, and even brain fog. Anyone with Celiac Disease already knows to stay away from any food product with gluten, as the result of neglect is painful. A gluten-free diet means one must avoid foods with oats, rye, spelt, wheat, and barley. These types of food may be replaced by soy, rice, buckwheat, bean flour and some other food options according to the National Institute of Health. Much scientific research has been done in this area if interested in finding out more. Pamela Twitchell and Dennis Karp recommended that I, Scott Foley, go and check out the bakery so Dennis and I made a visit and received a tour. We had the privilege of meeting with and talking to Leslie, one of the owners AND the baker. She kindly took the time to explain to us some of the benefits of a gluten-free diet as she baked her gluten-free bread in front of us.

At the Great Harvest Bread Company they try and keep all things natural, whether it is a gluten-free product or not. As Leslie was stirring the gluten-free bread dough and cleaning out the old loaf pans, she took the time to explain some of the ins-and-outs of how the protein composition in gluten affects some individuals because of the strain it puts on their digestive system. In regards to gluten-free products, it is the companies’ goal to provide gluten-free foods that still taste good. “If you do not like the taste, you will not eat it,” she said. “Gluten-free bread helps to provide moms and dads the option of letting the whole family eat peanut butter and jelly sandwiches even when one child may be gluten sensitive,” Leslie explained to us.
I would certainly recommend the Great Harvest Bread Company for anyone who desires to live a gluten-free diet or who wants to spend their money on a good, healthy, natural, nutritious meal. Tuesdays are the bake day for fresh gluten-free and gluten-free/dairy free products, but one can purchase the gluten-free products later in the week as they freeze the bread that is not purchased Tuesday. Great Harvest “baker’s dozen” cards are available to their customers in which after one purchases 12 bread loaves the 13th is free.
